Irish cuisine certainly is high on my list of foods I enjoy. Lamb was something I learned to love later in life. We raised beef, pork, and chickens on our farm and that is what we ate. Then I discovered lamb. The sauce on this lamb makes it especially delicious. I wished I had twice the sauce because it was so good. Know you will enjoy this delicious lamb as well.

Bucky and Amanda Thrash moved to Buffalo Creek in 2022. They are busy young working parents whose free time is usually spent with the kids or entertaining close friends. Bucky enjoys a game of golf and has started taking young Beau to the putting course as an introduction to the sport. Amanda is a busy working mom to Beau and infant daughter Shelby. The family are active members of Lakepointe Church.

Adopted in 2023, it did not take long for Frenchie Willow Jane, a Blue Merle Pied French bulldog, to become a beloved member of the Wilson family—Elizabeth, John, Bennett and Grey. Funny, smart and loving, little Willow Jane, along with companion Max, another Frenchie, will provide lifelong boyhood memories for the family.

Drew Crouse, an extremely athletic and 14- year old 9th grader, who plays baseball, football, and basketball. Drew says that being a part of a team is like having a small group of people you can trust and count on, which is good when you spend countless hours training with them. Sports has made him mentally stronger person because you constantly have to work hard to become a better player, and in the end helps your team as a whole. Although Drew likes all three of the sports he gets to play, when asked what Drew’s favorite sport to play, he responds with, “I enjoy basketball the most because it is more fast paced and fun!” Drew’s advice to other kids about being a team player is to do what can help or benefit your team the most.

Where is the best place to be when winter winds are blowing and temperatures are dropping? Kauai, Hawaii, of course. In January, when temperatures were 11 degrees in Texas, we flew to Kauai. 3,894 miles from here, we landed on the lush tropical island of Kauai. From the 11th floor of the Marriott we had a great view of Nawiliwili Bay where teal blue waters crash against the black lava rocks. Stunning beauty. People were walking on the beach, children playing in the sand, swimmers were on surfboards and paddling outrigger canoes. You could hardly wait to join them. But sitting on the balcony listening to the relaxing sounds of white caps hitting the lava rocks, and sipping on a margarita, was even more inviting. We will walk on the beach later. From here we will view the sunrises and sunsets that are glorious. It is so peaceful. I can't think of a better place to be in January!
