Ice cold with warm spice, this might be the perfect winter cocktail. The team at Slim’s Pizzeria crafted the Saint Slim with help of Feizal Valli, who had just opened his new House of Found Objects bar in downtown Birmingham. “We were looking to create a cocktail that embodied the spirit of Slim’s and our partnership with local businesses, farmers, and the community. Justin Hill from Eastaboga Bee company provides us with the most incredible local honey that we then turn into our signature hot honey for pizzas, cocktails, and any dish where we see the need for sweet heat,” says John Rolen, chef/partner at Slim’s.
Saint Slim
1-1/4 ounces Gin
3/4 ounce Aperol
3/4 ounce St. Germain
3/4 ounce lime juice
1 teaspoon Slim’s hot honey*
Add all ingredients to a cocktail shaker with 1 cup of ice. Shake for 10 seconds, then strain into a coupe glass and garnish with a sprig of fresh thyme.
*Several brands of hot honey can be ordered online. You can also try your hand at making your own by simmering 1 cup of honey with fresh or dried chiles, straining and cooling.
