Summer Rainbow Salad
The next time you’re looking for a healthy, delicious, and colorful side salad to eat with a meal, look no further than this nutritious salad filled with the vitamins and minerals you need!
Salad ingredients
- Lettuce - one heart Romaine
- Tomato - 2-3
- Onion red or yellow - ¼ small
- Cucumber - ⅓ medium
- Avocado - 1
- Carrot - 1 large
- Feta
- Kalamata olives
Directions
- Dice lettuce, tomato, onion and cucumber finely into a large bowl.
- Shred carrot, and add to bowl.
- Next, add feta cheese, olives, and avocado *If you plan on refrigerating it for later, wait to put the avocado on.
Dressing
- Olive oil - 3 tbsp
- Lemon juice - 1 lemon
- Garlic - one clove
- Onion flakes - one tbsp
- Mint - one-two tbsp
Directions
- Combine ingredients together into a small cup.
- Stir well.
- When you are ready to serve the salad, pour the mixture slowly into the salad.
- Stir the salad very well and enjoy!
