Fall Salad with Maple Vinaigrette

This salad is a wonderful addition to the Thanksgiving table. Feel free to use your favorite greens. If you slice the apple ahead of time just submerge it in a bit of ice cold lemon water to keep from oxidizing.

For the Salad:
2 cups thinly sliced cauliflower
1 crisp tart apple, sliced
5 cups mixed greens (such as red leaf, arugula &spinach)
1/4 cup chopped parsley
1 tablespoon minced chives

For the Vinaigrette:
3 tablespoons extra virgin olive oil
2 tablespoons white balsamic vinegar (or other nice white wine vinegar)
1 small clove garlic, grated on a micro plane or minced (about 1/2 teaspoon)
1 teaspoon pure maple syrup
Salt and pepper to taste

Directions:
In a large mixing or serving bowl whisk together the vinaigrette. Add all of the
salad ingredients and salt and pepper. Toss well and taste for seasoning.
