When Izmene Peredo notes her local restaurants offer fresh Mexican fare for breakfast, lunch, and brunch, she’s not exaggerating. “At Con Huevos, we make everything from scratch — every single day,” she explains. “No exceptions.”
Nestled in the heart of Norton Commons as well as four other locations, Con Huevos isn't just a place to grab a bite; it's a vibrant celebration of family, community, and culinary excellence. Behind this beloved spot are proud owners Izmene and her husband, Jesus Martinez, who bring a deep passion for fresh cuisine and cultural pride to every plate they serve.
Recipe for Success
Izmene and Jesus's decision to open a restaurant stemmed from their backgrounds in marketing and a shared love for the art of cuisine. Both earned bachelor's degrees in business and marketing from the University of Guadalajara and Instituto Tecnológico de Monterrey in Mexico. For over a decade, they honed their skills at Brown Forman in Mexico, with Jesus serving as the Herradura Tequila Brand Director and Izmene as the National Trade Marketing Manager.
Their move to Louisville in 2011, when Jesus was promoted to Global Brand Manager for Tequilas at Brown Forman headquarters, marked the beginning of their entrepreneurial endeavors.
“We opened the first Con Huevos location on Frankfort Avenue in 2015 with a mission to offer the best local breakfast, lunch, and brunch fare,” explains Izmene. “And we know the restaurant business can be demanding, so we wanted to maintain a healthy family-life balance.”
What sets Con Huevos apart is its commitment to quality and authenticity. With Mexican roots, Con Huevos infuses flavors of traditional Mexican breakfast and lunch dishes while excelling in American breakfast classics as well. Notably, according to the 2018 Travel + Leisure piece, “These Are the 25 Best Places to Eat Pancakes in America,” their pancakes rank among the top 10 best in America!
The restaurant's connection to the local community goes beyond serving delicious food though. Con Huevos holds certifications as an Autism-Friendly Restaurant (one of the first locally to do so) and actively supports organizations such as the Norton Children's Hospital Foundation.
“For the past decade, we have been actively involved in the Latino community as well, building relationships and supporting organizations such as the Louisville Hispanic Chamber of Commerce,” Izmene adds.
Embracing Growth
Like many businesses, Con Huevos faced its share of challenges during the global pandemic. However, Izmene and Jesus embraced the opportunity to become more efficient, creative, and adaptable. Since then, their dedication to their cooking and each other has fueled their growth while still focusing on family. The couple has two sons, Ivan and Santi; Ivan manages the NoCo location, ensuring that every guest leaves with a smile, while Santi, their younger son, enjoys attending 3rd grade at KCD school.
With a beautiful patio at the NoCo location, catering services, and event space rentals, Con Huevos invites residents to unwind and savor the present moment with each tasty bite.
