Apple Cider Doughnuts

Ingredients:
  • 1 1/2 cups apple cider
  • 5 TBSP unsalted butter
  • 2 large eggs
  • 1 cup granulated sugar
  • 3 1/2 cups all-purpose flour
  • 2 tsp cinnamon
  • 1 ½ tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/3 cup packed brown sugar
  • 1/2 cup unsweetened applesauce
  • 1/3 cup buttermilk
  • 1 TBSP vanilla extract
  • Vegetable or canola oil, for deep frying
Directions:
  1. Heat apple cider over medium high heat in saucepan for 8-10 minutes, until syrupy. Remove from heat and mix in butter and brown sugar.
  2. Cream together butter and ½ cup granulated sugar in separate bowl. Add eggs and beat until fluffy.  Add the cider mixture to bowl. Mix in applesauce, vanilla extract, and buttermilk.
  3. In medium bowl, mix together flour, ½ tsp cinnamon, baking powder, baking soda, salt, and nutmeg.
  4. Combine the wet and dry ingredients in the large bowl and stir gently.
  5. Cover the bowl and refrigerate for 45 minutes.
  6. In wide, shallow bowl, combine the remaining ½ cup granulated sugar and  1 ½ tsp. cinnamon.
  7. Once dough is chilled, remove from refrigerator and place on a floured surface. Knead it into a ball, lightly dust it, and roll out the dough until it is approximately ½ inch thick.
  8. Using a doughnut cutter, cut out doughnuts (one dozen) and place on lightly floured baking sheet. (you can either fry or roll the center doughnut scraps into an extra doughnut). Chill until oil is heated (see below).
  9. Fill a Dutch oven (or similar pot) with oil and heat to 375 degrees. (can use deep-fry thermometer to check)
  10. Place 2-3 doughnuts at a time into oil and fry – one minute per side.
  11. Remove with tongs when lightly golden brown, place on paper towel lined plate to drain off excess oil, and roll into cinnamon/sugar mixture.
