Blueberry Buckle
for a warm, cozy morning

This recipe comes from my mom's best friend and recent neighbor, Sandy Olexsy. Sandy would make Blueberry Buckle for her family and gave us the recipe. My mom would make it for us as well for special weekend mornings, always when we visited home from college or from North Carolina.
Every time I smell this baking, I think of Mrs. Olexsy. One time when my mom made it, she realized she forgot to add the blueberries! We all had a great laugh!
The mix of cinnamon, sugar, and warm blueberries is an unforgettable taste, especially on a cold winter morning. I'm excited to share this recipe with you and hope you give it a try!
Ingredients
- 1/4 cup of Butter (or Margarine)
- 3/4 cup of Sugar
- 1 Egg
- 2 cups of Flour
- 2 tsp of Baking Powder
- 1/2 tsp of Salt
- 1/2 cup of Milk
- 2 cups of blueberries
Directions
Preheat your oven to 375 degrees.
Cream butter; add sugar and beat until light.
Add in your egg and beat well. Add dry ingredients alternately with milk, beating until smooth.
Fold in the blueberries.
Pour mixture into a greased 9x9x2" pan and sprinkle with *crumb topping*
Bake for 30 minutes or 50 minutes for a double batch.
*Crumb Topping*
Blend 1/4 cup soft butter, 1/2 cup of sugar, 1/3 cup of flour, and 1/2 tsp of cinnamon.
