Cream Cheese Quesadillas
Quick, easy, and soooo good!
“We had a version of this at a party a long time ago, and over the years just adapted the recipe to what we liked. It was something the kids could actually make on their own. Anyone can make these because there’s no cooking involved. We often use serrano peppers, if you like it hot! Feel free to change out any of the ingredients to remove the things you don't like or add something you like better. You can almost never go wrong with cream cheese. We have found that a really good butterbeer goes great with these!”
Ingredients:
1 block of softened cream cheese
5 green onions (thinly sliced)
2 tablespoons chopped black olives
1-2 fresh jalapeños (chopped into small pieces)
12 flour tortillas
Your favorite salsa for dipping
Instructions:
- In a bowl, incorporate the softened cream cheese, sliced onions, chopped black olives, and chopped jalapeno, until well combined.
- Take one tortilla and spread a thin layer of the cream cheese mixture evenly over the tortilla almost to the edges (like it is a pizza sauce). Next, layer another tortilla on top of that and repeat the process. Add a third and final tortilla on top of that layer so that you have three tortillas with two layers of cream cheese in-between.
- Using a sharp knife, cut the quesadilla into 8 triangles pieces.
- Put your favorite salsa into a dish on the side, use it as a dipping sauce, & enjoy!
