Healthy Oat Cookies

It’s back to school time! Here’s a healthy cookie recipe that you can even eat on busy mornings for breakfast without guilt. These oatmeal cookies have limited, wholesome ingredients and are naturally sweetened with bananas. I used strawberries and chocolate chips as toppings but customize as you wish.

Ingredients:
2 mashed ripe bananas
1 1/2 cup old fashioned oats
1/4 cup natural peanut butter
1 tsp baking powder
Diced strawberries and a handful of mini chocolate chips for topping, optional

Instructions:
  1. Preheat oven to 375°F and line a baking sheet with parchment paper. Set aside.
  2. Mash two ripe bananas, add old fashioned oats, peanut butter, and baking powder. Mix with a spatula until combined. 
  3. Scoop a heaping tablespoon of mixture and place on the parchment-lined baking sheet. Space evenly.
  4. Add strawberries and mini chocolate chips on top of each cookie. Measure the amount with your heart.
  5. Bake in the oven at 375°F for approximately 14-15 minutes, or until golden. Cool on a baking rack and serve.
