3 large ripe avocados (or 4-5 small)
½ small yellow onion, finely diced
2 Roma tomatoes, diced
3 tablespoons fresh cilantro, finely chopped
1 jalapeno pepper, finely diced
2 teaspoons minced garlic
1 lime, zested and squeezed
½ teaspoon sea salt

Cooking Instructions
Slice the avocados in half, remove the pit, and scoop into a mixing bowl.
Mash the avocado with a fork and make it as chunky or smooth as you'd like.
Add the remaining ingredients and stir together. Give it a taste test and add a pinch more salt or lime juice if needed.

Fresh guacamole will only keep for about a day after it is made as it will quickly turn brown, so this is a recipe I don't recommend making too far in advance or in larger quantities than what you plan on eating right away.
