Lemon Berry Cake

Ingredients
1½ cups all purpose flour
1 cup sugar
¼ teaspoon salt
1 teaspoon baking soda
5 tablespoon olive oil
¾ cup water
¼ cup fresh lemon juice
1 teaspoon vanilla extract
½ cup blueberries
½ cup strawberries, diced
Frosting
3 tablespoons cream cheese, softened
1 ½ tablespoons butter
2/3 cup powdered sugar
- Preheat oven to 350 degrees. Spray an 8-inch cake pan with cooking spray or line with parchment paper and set aside.
- In a large bowl, combine flour, sugar, salt, and baking soda, and mix well.
- In a bowl add the oil, water, lemon juice, and vanilla extract and mix until combined. Add into the dry ingredients and mix well.
- Gently toss blueberries and strawberries in flour. Shake of excess and fold into the batter.
- Pour batter into cake pan. Bake for 35-40 minutes or until golden brown.
- Let the cake cool in the pan before frosting.
7. To make the frosting, beat together the cream cheese and butter until fluffy. Slowly add in the powdered sugar until combined. If the frosting is too thick, add a little water. If too thin, add more powdered sugar.
8. Enjoy!
*Cover and refrigerate left over cake
