Nana's Fresh Apple Cake
My mom believed in whole foods and didn't allow overly processed "junk food" in her kitchen. She was definitely ahead of her time. This cake was a staple in our home. It's great for dessert or as a warm breakfast treat especially nice to have on hand for houseguests. Enjoy!
INGREDIENTS
- 2 eggs
- 2 cups sugar
- 1 1/2 cups vegetable oil
- 3 cups flour
- 3 cups chopped apple (peeled)
- 1 1/2 cups pecans (or walnuts)
- 3 teaspoons cinnamon
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/4 teaspoon salt
PREPARATION: Combine all ingredients. Pour into greased and floured tube or Bundt pan. Bake at 325 degrees for 1 1/2 hours. Cake will keep for a week wrapped in foil.
