Ingredients:
200 g milk
2 ¼ teaspoons gelatin powder
200 g heavy cream
120 g pumpkin puree
125 g brown sugar
2 teaspoons vanilla extract
1 tablespoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
1 tablespoon maple syrup of your choosing
Instructions:
Begin by blooming the gelatin: In a small dish, dissolve the gelatin powder in warm water and set aside.
In a saucepan, combine the milk, heavy cream, pumpkin puree, brown sugar, vanilla extract, ground cinnamon, nutmeg, allspice, and maple syrup. Heat over medium heat until the mixture is just simmering.
Using a whisk or immersion blender, blend the mixture until smooth.
Remove the saucepan from the heat and let it cool slightly until warm.
Add the bloomed gelatin to the warm mixture and stir until well combined.
Pour the mixture into serving glasses and refrigerate overnight to set.
