Caramelized Onion & Goat Cheese Tarts

Ingredients:
- 1 sheet puff pastry
- 1 TBSP olive oil
- 2 onions (peeled and thinly sliced)
- 4 oz. crumbled goat cheese
- Balsamic reduction or glaze
- Fresh chopped parsley
- 1 egg
Directions:
- Preheat the oven to 375 degrees, and line a large baking sheet with parchment paper; set aside.
- In a medium pan over high heat, add the olive oil and sliced onions. Cook the onions, stirring frequently, until they begin to brown, about 5 minutes. Reduce the heat to medium-low and continue to cook for an additional 15-20 minutes, or until the onions turn a deep golden color and become very soft. Stir occasionally throughout the cooking process. Remove from heat.
- Cut the pastry into 12 equal squares and place on the baking sheet. Brush the edges of the pastry with the whisked egg. Place a spoonful of the onions in the center of each pastry square. Bake for about 15 minutes or until golden and puffed. Remove from oven.
- Top with crumbled goat cheese, balsamic reduction, and a sprinkle of parsley. Serve immediately.
