Quick Cheesy Cottage Pie

This is a homey type of comfort food often using leftovers. It is a traditional British meal.

This is my recipe based on a traditional cottage pie recipe.
Cottage pie uses beef- shepherd's pie uses lamb.
I make mine quickly by using prepared deli mashed potatoes and frozen veggies! And the
potatoes contain cheddar cheese! Yum!
Ingredients:
1 small onion, diced 1 stalk celery, chopped
1 tablespoon butter
1 pound low-fat Hamburger
Salt & pepper to taste
2 tablespoons tomato paste
1 tablespoon flour
2 teaspoons beef concentrate bouillon paste
1/2 cup water
2 cups mixed frozen vegetables, cooked according to package directions
1- 24-ounce package of ready-made mashed potatoes
1 cup cheddar cheese, chopped or shredded
1 tablespoon butter
Prep Work Involved?
I like to let the grocery store help by using mashed potatoes from the Deli and frozen
vegetables.
What are the step-by-step instructions?
Preheat oven to 350 degrees
Heat the onion, celery, and butter in an oven-proof pan. (I used a 9-inch cast iron pan but you
can prep the meat in a stove-top skillet and build the pie in an oven-proof pie plate!)
Cook for 3-5 minutes until softened and add the hamburger meat. Break up the meat and cook for 5-7 minutes.
Season with salt and pepper.
When the meat is just about browned add the tomato paste and flour and cook in. Then add
the beef concentrate bouillon and water. Stir and cook down until the meat mixture is thickened.
Spread the meat mixture across the pan and top with the cooked veggies.
Spread half of the mashed potatoes across the top of the veggies.
Sprinkle 3/4 cup of the cheese across them and top with the rest of the potatoes. Bake the pie
for 25 minutes.
Remove from oven and turn setting to broil.
Sprinkle the rest of the cheese across the top of the pie and dot with the butter. Broil for
several minutes until the top looks golden. Remove and serve. Serves 4-6
