Peanut Butter & Jelly Cookies
Ingredients
1 stick unsalted butter
¼ cup brown sugar
¾ cup granulated sugar
1 cup creamy peanut butter
1 large egg
1 tsp. vanilla extract
1 ½ cups flour
1 tsp. baking soda
¼ tsp. salt
½ cup seedless jam (any flavor)
¼ chopped peanuts
- Preheat oven to 350 degrees and line two baking sheets with parchment paper.
- Using a stand or hand mixer, beat butter until smooth and creamy.
- Add granulated sugar and brown sugar and mix to combine.
- Mix in peanut butter until well blended, scraping down sides.
- Continue mixing and add in the vanilla extract and egg.
- Add flour, baking soda, and salt and mix on low speed until mixed. Do not over mix.
- Shape dough into 1 inch balls and place onto baking sheets.
- Dip a fork into sugar and press down dough into a cross pattern to flatten.
- Add ¼ tsp. jam into the center of each cookie and sprinkle chopped nuts on top.
- Bake 13-15 minutes or until lightly brown.
- Remove from baking sheet and cool 5-10 minutes on a wire rack.
