Peanut Butter & Jelly Cookies

Ingredients
1 stick unsalted butter
¼ cup brown sugar
¾ cup granulated sugar
1 cup creamy peanut butter
1 large egg
1 tsp. vanilla extract
1 ½ cups flour
1 tsp. baking soda
¼ tsp. salt
½ cup seedless jam (any flavor)
¼ chopped peanuts
 
  1.  Preheat oven to 350 degrees and line two baking sheets with parchment paper.
  2.  Using a stand or hand mixer, beat butter until smooth and creamy.
  3.  Add granulated sugar and brown sugar and mix to combine.
  4.  Mix in peanut butter until well blended, scraping down sides.
  5.  Continue mixing and add in the vanilla extract and egg.
  6.  Add flour, baking soda, and salt and mix on low speed until mixed. Do not over mix.
  7.  Shape dough into 1 inch balls and place onto baking sheets.
  8.  Dip a fork into sugar and press down dough into a cross pattern to flatten.
  9.  Add ¼ tsp. jam into the center of each cookie and sprinkle chopped nuts on top.
  10. Bake 13-15 minutes or until lightly brown.
  11. Remove from baking sheet and cool 5-10 minutes on a wire rack.
