Shrimp Stuffed Shells
Adapted from my co-worker’s recipe, this recipe makes a nice, fancy-feeling dinner.
INGREDIENTS
- ½ lb. shrimp: Cook in butter, a splash of olive oil, salt, pepper, basil, oregano, parsley, and garlic powder (or whatever spices you like—a dash of each). Chop finely after cooking.
- 15 oz. ricotta cheese
- 1 cup shredded mozzarella
- A handful of sundried tomatoes in oil, finely chopped
- A small bunch (about two handfuls) of spinach, chopped
INSTRUCTIONS
- Mix together the above ingredients and fill in cooked jumbo shells (cook shells according to package instructions).
- Coat bottom of 13x9 pan with marinara and add stuffed shells.
- Cover shells with more marinara and then top with mozzarella, parmesan, parsley, and panko bread crumbs.
- Bake at 375F for 20-30 minutes, until cheese is melted and everything is heated through.
